Our range of fruit infused gins tells the story of Scotland’s seasons. We’re attuned to the natural cycle of Scotland’s countryside, sourcing or foraging the right fruits at the right time of year to produce gins that are all about quality and taste.

Our berries are grown in the fields of Angus and Perthshire, many within sight of the Bothy; our rhubarb is grown in the Bothy garden itself.

Age-old processes are applied: the fruit is soaked in our gin for three months and hand-turned daily to yield distinctive flavours.

Tasting Notes.

Appearance

The natural berry colour, from the rich shades of the sloe and the blueberry to the delicate rhubarb.

Aroma

Invariably fresh. Stronger in our raspberry and strawberry gins; dry and subtle in blueberry.

Flavour

Reflective of the inherent qualities of the fruit: the delicate strawberry, the more powerful sloe.

Rhubarb Collins

Ingredients

Gin Bothy Rhubarb — 35 ml
Fennel, really finely diced with some grated ginger — 55 g
Freshly Squeezed Lemon Juice — 30 ml
Soda Water
Fresh Ginger & Rhubarb

Method
Add all the ingredients except the soda to a shaker.
Fill two thirds of the way up with ice and shake hard for 20 seconds.
Fill a glass with ice, strain the mixture into the glass and top with soda water.
Add a shard of fresh ginger and a slice of rhubarb.
